[RC232] Are all the connections on P5 necessary for a Microcontroller? Or are the pins Config/TXD/RXD/GND sufficient?

Only pins required are TXD and RXD (along with VCC and GND of course), but for flexibility, connect also Config, Reset and CTS (for larger packages and flow control required).
