[HW11XX;12XX] Could you please confirm that RC1180(HP) are fully Pin-to-Pin compatible with RC2500(HP)? I mean – if you make a design for RC1180(HP) and then solder RC2500, will it work?

Yes, the modules are pin compatible. The consumption of the RC1180 and RC1180HP (same with the RC2500(HP) series) differ and you need to design with it. The antenna is also different on 800MHz than on 2.4GHz.
